一年来,在集团的正确领导和亲切关怀下,在全体员工的共同努力下,我中心克服了食品原材料价格猛涨和用工成本激增的双重巨大压力,坚持学生食堂饭菜价格不上涨,强有力地保障了学校稳定工作,较好地完成了全年的工作任务。为了在新的一年发扬成绩,弥补不足,现将全年工作总结如下:
一、积极倡导敬业奉献精神,狠抓组织纪律管理,力求管理水平不断提升
组织纪律性是餐饮各项工作的基本保证。在中心的积极倡导与要求下,中心职工继续发扬了遵守纪律、无私奉献的精神,任劳任怨,确保了各项服务保障工作按时按质完成。
一年来职工积极参加中心组织的各种会议,认真领会上级单位的精神和指示并加以贯彻;中心全体正式员工每周末多上一天班,确保了每天一线均有负责同志在岗;各餐厅经理每天清早提前一小时到岗,认真检查早餐准备和销售情况,中午和晚上开餐时间也都坚守在工作岗位,平均每天在岗时间超过11个小时;采购组员工不论严寒酷暑,无论双休日与节假日,每天早上六、七点上岗,认真验收配送餐厅所需物资;微机房工作人员认真遵守倒班制度,从早6:00到晚10:00,从未出现过空岗现象,为学生餐厅、聚博园和校内超市的销售工作做好了卡机服务保障工作。
做到了看好自己的门,管好自己的人,办好自己的事。一年里
没有发现将公家东西拿回自己家的损公肥私现象,表现出了职工的优秀品质和中心的良好风气。
二、牢固树立为师生员工服务的意识,重视服务对象的需求状况,力争提高广大师生的满意度
中心积极参加集团组织的师生代表座谈会,认真听取学生管理部门和各院系学生代表的意见和建议,通过加强与服务对象的沟通交流,进一步了解了学生的需求,及时对各项工作了进行调整。各餐厅经理都有很强的竞争意识,他们想方设法吸引学生到自己餐厅来,他们努力在饭菜质量、花色品种、就餐环境和饭菜保温上下功夫,努力提高学生就餐率。
一餐厅大胆创新,合理利用闲操作间,优化加工炒制和销售流程,推出精品家常菜窗口,中锅炒制,随炒随上,深受广大师生欢迎;二餐厅定期更新饭菜品种,营业额逐步上升,屡创新高;三餐厅一、二楼在天冷之际,推出砂锅项目,每天就餐师生络绎不绝;聚缘阁餐厅加强营销与服务,充分发挥自身技术优势搞好小炒与宴会项目,还配合校团委顺利完成新年学生包饺子联欢活动的任务;科技餐厅自下半年以来,坚持做好夜宵项目,努力为下晚自习学生提供安全可口的小吃,受到科技学院师生的好评。
三、重视采购工作,千方百计控制进货成本,为餐厅赢利打下良好基础
采购工作是餐饮中心成本控制的关键一环。采购到物美价廉的物资,不仅关系到餐厅成本高低,更关系到广大师生的身体健康,因此,中心极为重视采购验收工作。采购组肩负着各餐厅除米面油
菜之外的所有物资采购供应工作,一年里,采购组职工不辞辛苦、勤转市场、货比三家、讨价还价,努力降低采购成本;对所采购物资严格验收把关,坚决不让无证不合格产品流入餐厅。在数次市防疫部门对我中心采购工作的检查中,均未发现不合格问题,受到了防疫部门的好评。
四、积极想方设法,克服成本压力,实现了餐厅毛利率不降低下半年以来,受国内外多种因素影响,全国包括我市以农产品为主的食品原材料价格上涨迅猛,价格总水平逐月攀升,与去年同期相比,我中心采购的食品原材料平均涨幅在20%以上,特别是蔬菜价格平均涨幅在60%以上。这无疑极大地增加了以上述物资为主要原材料的餐厅的运行成本压力。现餐厅所售主食均为保本或亏本供应。尽管面对重重困难,各餐厅在经理带领下,在全体员工共同努力下,精打细算、厉行节约、推陈出新,提高产品附加值,实现了相比去年毛利率不降低的好成绩。
五、认真落实集团“安全生产月”活动,加强安全管理,力争将隐患消灭在萌芽状态
自201*年10月1日至10月31日,中心开展了为期一个月的“安全生产月”活动,集中力量对安全生产工作进行了全面检查,对查出安全生产管理方面和设备设施方面的安全隐患,认真整改;严格按照河北省教育厅《关于在全省高等学校开展乳制品专项治理工作的通知》精神,认真排查,严把进货关,彻底杜绝了有害乳制品流入餐厅;积极组织餐厅员工参加学校组织的消防演习,力争做到让每个新招聘员工均参加过演习,懂得基本消防知识,掌握扑救初
期火灾的能力。
六、积极探索,认真论证,为三餐厅改革试点工作精心筹备方案
为满足广大师生日益多元化的就餐需求,提高学生就餐率,集团决定以第三餐厅为试点,全力推进餐饮服务中心的改革工作。餐饮服务中心全力配合集团此项重点工作,先后到西安、重庆、北京以及本市一些高校做细致调研,联系专业餐饮公司来商讨合作事宜,聘请专业施工单位和厨具厂商对餐厅改造进行预算,为最终决策提供切实依据。
尽管过去的一年取得了一定的成绩,我中心的工作也暴露了一些不足:三餐厅一层炸食间因操作不当原因起火,造成了一定的经济损失和不良影响,这也给我们敲响了警钟:安全工作必须常抓不懈;针对员工服务态度的投诉呈上升趋势,暴露了员工服务意识有待加强培训的问题。
展望新的一年,我们深感任重道远,但是,不管面对多大的艰难险阻,我们有信心、有决心,在集团的正确领导下,在全体员工的积极努力下,把中心工作办得红红火火,努力将各项工作提高到一个新层面,争取201*年我们再创佳绩。
