餐饮部的经营面积及经营项目增加。

1.本年度餐饮部新增加营业经营项目有茶室、大堂吧、豆捞餐厅、西饼屋,增加的各营业项目经过近半年左右的试营业、营业后,各项工作已逐渐步入正轨,服务质量也在不断提高,豆捞开业不到3个月,目前生意日渐红火,客户好评不断。2.中餐厅由年初的13个包厢扩展到目前的21个包厢,提高了中餐厅的接待能力,丰富了包厢的类别,缓解了高峰期客人订不到包厢的情况。

高标准完成国家卫生城市迎检工作。

市在进行国家卫生城市评审期间,我酒店作为市卫生监督局重点推荐迎检单位,经过了市级、省级、国家级卫生权威部门的明察暗访,得到了各级领导的好评。(三)

部门激励机制的完善。

1.服务员及点菜员根据餐饮营业特点制定出服务员及点菜员提成方案,有效的调动员工工作积极性。

2.对酒店的优秀员工、优秀部门及微笑大使评选活动,鼓励员工积极参与,并对活动过程进行监督,最终本部门在两次活动当中均取得不错的成绩。

3.对部门班前会流程进行规范,固定流程,并在流程中加入部门口号、部门激励歌曲、解散口号及动作等内容,对集体凝聚力等不断渗透。

定期及不定期培训。

1.各部门员工坚持每周至少一次固定时间培训。2.根据每天营业情况各部门自行安排培训时间。(五)

抓好规范管理,强化协调关系,提高综合接待能力。

1.建立看菜制度,每天包厢客人用餐结束后,由厅面通知点菜员及厨师长对客人用XXX国际酒店餐饮部201*年度工作总结

餐情况进行查看,并分析客人用餐情况,各参加人员提出问题及解决方案,并由营业部做每天看菜记录情况。

2.完善餐饮部的会议制度。会议包括每周例会、班前班后会、卫生安全检查汇报会等,由于制度的完善,会议质量提高了,上级指令得到及时落实执行。

3.加强协调关系。酒店分工细,环节多,一项工作的完成,有赖于各部门之间的协调合作,每周例会上反复强调,出现问题,部门之间不得相互责怪、推搪,要敢于承认错误,多发现对方的优点,搞好协调,今年大大减少了过去存在的一些脱节不协调的现象。4.提高综合接待能力。今年,全面抓好服务规范,出品质量,使接待能力大大提高。在做好各类社团宴会、酒会、喜宴、自助餐、会议餐接待的同时,还做好高级领导和各大公司、酒店的各类型宴会的接待,如接待了多个省领导、市长等等领导。由于酒店装修典雅大气、菜品味道可口、服务不断提高,使宾客满意度逐渐提高。

增强员工效益意识,加强成本控制,节约费用开支。

1.强调成本控制、节约费用的重要性,增强了员工的效益意识,并要求员工付之行动。同时完善有关制度,明确责任,依*制度去加强控制。全年完善了《开关灯规定》、《物品领用制度》、《空调灯光开启制度》、《各部门交接班检查制度》、《办公用品领用制度》、《物品申购制度》等。今年全体员工已养成良好的节约习惯,合理开闭水阀、气阀、电器,发现浪费现象,及时制止。另外,餐饮部、采购部、财务部、稽核部定期进行市场调查,掌握市场价格动态,及时调整原材料的进货价。2.配合采购部拓宽采购渠道,目前正在对武汉采购食材成本进行核算,争取在年底前确定。

厨师队伍的优化及菜品质量控制及更新。

1.根据客户满意度及部门整体工作考虑,对处事团队进行不断优化,旨在提高出品质量。

完善劳动用工制度和培训制度,提高员工素质。

1.严格劳动用工制度,餐饮部招聘新员工,符合条件的,择优录取,不符合条件的,一律拒收,不讲情面,保证招工的质量。同时,上级领导深入员工之间,挖掘人才,不断充实队伍,通过反复考察,全年提拔主管人,领班人。对违反酒店规定的员工,以教育为主,对屡教不改者,则进行处罚解聘。由于劳动用工的严格性,员工素质较高,办事效率大大提高。(九)

1.重视食品卫生,健全各项食品卫生岗位责任制,成立卫生检查组,明确各分部门卫生责任人。经过全体员工的努力,全年未发现因食品变质而引起的中毒事故。2.抓好安全防火工作,成立安全防火领导小组,落实各分部门安全防火责任人,认真贯彻安全第一,预防为主的方针,制定安全防火制度,完善安全防火措施,组织员消防培训,并进行防火器材实操培训。通过有效的措施,确保了餐饮部各项工作的正常开展和财产的安全,今年以耒未发生任何的失火事故。

本年度在总经理的带领下,对星评标准进行了全面学习,并对不达标项进行检查和整改。三、
