内容

一,经营状况:

截止本月1日至25日,餐饮部共完成销售额280.87万元。截止本月30日,婚宴20档,共计342桌,金额478372元;生日宴6档,42桌,金额61440元;会议35档,共计214桌,都与去年同期都有不同程度的增加。二,厨房方面:

1,潮坊香餐厅菜肴翻新了20多个品种,主要目的在于提升人气,推广新菜肴。

2,推出外卖服务。其种类有三种,分别为:218元/套;388元/套;588元/套,目的在于提高了宝隆在社会上,特别是在周边环境内的影响力。

3,鱼翅、鲍鱼在实际操作中,安排专人按照规范进行操作,保证了质量。

4,原来的米饭放置在保暖筒内,但使用下来热度不够,现在请采购部制作了保暖被套,效果较好。

5,针对厨师对新推出菜肴有不熟悉的现象,统一标准,进行培训。6,春节咖啡厅两套早餐菜单的确定及制作。7,1月15日至2月15日期间海鲜推广活动

8,确定西餐食品节主题、营销推广计划,做好其成本费用预算、备料、器皿准备及培训工作等。三,餐厅方面:1,制定餐厅工作方式的表格化、程序化,如:借用物品表格、迟到

登记表、班前会记录签收表格等。2,规定班前会内容,每天班将前一天需注意的事情记录下来,在第二天班前会上认员工了解并签名认可,会后对内容进行整理并规范存档工作;

3,三个餐厅配合默契,在运作期间相互协调,对人力资源合理利

用,提高宴会接待品质及菜肴品位,做好大型、重要宴请的人员调配工作,如:本月区府、重要宴请及时将各其它餐厅骨干人员调入江南厅做好接待工作;

4,人员工作安排表上交,做好人员的安排工作。

5,餐厅员工与厨房配合每天对菜肴进行信息汇总并做好相关的记录;

6,江南厅设置专人负责烫椅套,保证了包房内椅套的平整、服帖。7,对所有包房重新进行设计布置,并拍成照片,规范服务员在布置上的操作。

四,综合管理及协调方面1,做好部门人力资源编制流动情况及结构图;2,部门管事部做好量化管理

A,对每个工作台的餐具数量、品种进行配置,确保物品的正常运转;B,由管事部对物品的配置进行监控和管理,制定每个月的正常损耗率及物品添置数量及赔偿的比例。

3,完善预定处信息传递程序,要求预定处接到用餐变更通知、特别是临时变更通知后及时将信息传递到各相关班组,并上报李总监、周总厨、王经理、办公室。办公室做好督导作用。

4,制定了一年的系统培训计划,各班组根据分管管理者年度培训计划,制订班组每月培训计划并将每次培训情况以书面形式上报部门。同时按计划进行培训并做好培训记录,并在培训后由员工签名认可;

5,各班组做好了元旦期间菜肴推广、人员安排、节日安全;

6,做好春节外卖、年夜饭接待工作、元宵节接待工作的流程及菜单的制定、备料、器皿准备等相关的准备工作;7,制定春节期间工作安排。

8,召开采购成本控制、品质、营销及餐饮会议,总结上月工作,分析本月工作,制定2月份的营销计划。

9,成立餐饮销售部,确定其结构编制、工作职责,安排相关人员进行轮岗学习。
