内容

一，经营状况：

截止本月1日至25日，餐饮部共完成销售额280.87万元。截止本月30日，婚宴20档，共计342桌，金额478372元；生日宴6档，42桌，金额61440元；会议35档，共计214桌，都与去年同期都有不同程度的增加。二，厨房方面：

1，潮坊香餐厅菜肴翻新了20多个品种，主要目的在于提升人气，推广新菜肴。

2，推出外卖服务。其种类有三种，分别为：218元/套；388元/套；588元/套，目的在于提高了宝隆在社会上，特别是在周边环境内的影响力。

3，鱼翅、鲍鱼在实际操作中，安排专人按照规范进行操作，保证了质量。

4，原来的米饭放置在保暖筒内，但使用下来热度不够，现在请采购部制作了保暖被套，效果较好。

5，针对厨师对新推出菜肴有不熟悉的现象，统一标准，进行培训。6，春节咖啡厅两套早餐菜单的确定及制作。7，1月15日至2月15日期间海鲜推广活动

8，确定西餐食品节主题、营销推广计划，做好其成本费用预算、备料、器皿准备及培训工作等。三，餐厅方面：1，制定餐厅工作方式的表格化、程序化，如：借用物品表格、迟到

登记表、班前会记录签收表格等。2，规定班前会内容，每天班将前一天需注意的事情记录下来，在第二天班前会上认员工了解并签名认可，会后对内容进行整理并规范存档工作；

3,三个餐厅配合默契，在运作期间相互协调，对人力资源合理利

用，提高宴会接待品质及菜肴品位，做好大型、重要宴请的人员调配工作，如：本月区府、重要宴请及时将各其它餐厅骨干人员调入江南厅做好接待工作；

4，人员工作安排表上交，做好人员的安排工作。

5，餐厅员工与厨房配合每天对菜肴进行信息汇总并做好相关的记录；

6，江南厅设置专人负责烫椅套，保证了包房内椅套的平整、服帖。7，对所有包房重新进行设计布置，并拍成照片，规范服务员在布置上的操作。

四，综合管理及协调方面1，做好部门人力资源编制流动情况及结构图；2，部门管事部做好量化管理

A,对每个工作台的餐具数量、品种进行配置，确保物品的正常运转；B,由管事部对物品的配置进行监控和管理，制定每个月的正常损耗率及物品添置数量及赔偿的比例。

3，完善预定处信息传递程序，要求预定处接到用餐变更通知、特别是临时变更通知后及时将信息传递到各相关班组，并上报李总监、周总厨、王经理、办公室。办公室做好督导作用。

4,制定了一年的系统培训计划，各班组根据分管管理者年度培训计划，制订班组每月培训计划并将每次培训情况以书面形式上报部门。同时按计划进行培训并做好培训记录，并在培训后由员工签名认可；

5,各班组做好了元旦期间菜肴推广、人员安排、节日安全；

6,做好春节外卖、年夜饭接待工作、元宵节接待工作的流程及菜单的制定、备料、器皿准备等相关的准备工作；7,制定春节期间工作安排。

8，召开采购成本控制、品质、营销及餐饮会议，总结上月工作，分析本月工作，制定2月份的营销计划。

9,成立餐饮销售部，确定其结构编制、工作职责，安排相关人员进行轮岗学习。
