一.经营状况
各班组销售情况对比表(1月26日-2月20日)

潮坊香51.6882.27-37%64.1781%江南厅141.45186.78-24%122.96115%大堂吧西海岸22.004.1520.706%29.535.0074%83%合计219.28289.75-24.3%221.6699%原因:1.自助早餐,由于每天具有一定团队数量的客流量,使得营业2.潮坊香与江南厅营业额下降,主要是201*年的春节为2月1日,而201*年的春节为2月12日,这11天正是接待高峰季节。
3.根据201*年工作目标经营预算,部门按月份摊分指标,2月份截止20日,完成总指标的99%
二.营销。
1,年初一至年初三,来用餐的小孩赠送吉祥物---“羊”;
2,年初一至正月十五,推出新春团圆家宴三套(288元/套、588元/套、998元/套);
3,1月15日至2月15日,七个品种海鲜特价;
4,2月14日情人节,情人套餐298元/套、玫瑰花、巧克力推出;5,2月15日元宵节,推出5个品种汤团及有奖猜谜活动;
6,根据季节变化及外出考查后,对潮坊香与江南厅菜点进行了调整,推出一系列新菜肴;7,从2月21`日起,咖啡厅使用新推出的西菜菜单及送房菜单;
8,在三月份中有四个内容推广:分别为鲍翅推广、意大利食品节推广、绿阳台茶饮推广、海鲜食品节推广,目前正在准备之中。
三.管理。
1,节后,对各班组卫生、安全、维修等内容进行检查,列出具体维修内容上报相关部门,请其配合做好部门的维修工作;
2,根据酒店效益工资分配新方案,制订部门分配方案;
3,根据酒店免费停车方案,制订免费停车的用餐标准及联系老客人,核实车号牌,为客人办理免费停车证;
4,制订部门各岗位员工的职位描述;
5,针对哈尔滨天潭酒店事件,组织部门员工进行学习,从思想上引起高度重视,部门也制订了相关内容。
6,对物品的领用、保存、报损进行适当调整,由管事部进行监控,以降低易耗品的损耗率;
7,库存品进行整理,对已不能使用的财产予以报损,对节前因高峰接待领用的器皿进行整理入库;
8,餐饮销售工作的跟进,准备制订考核方案及招待老客户、开拓新客户费用申请;9,2月14日-2月17日,在何副总的带领下,前去广州进行考查,并准备互办食品节、洽谈月饼事宜;10,
专业人才引进招聘工作。
四,存在问题。
1,1月份工作中提出布件清洗及员工工作服事宜,目前没有变化;2,老客人停车证事宜:客人提出何时可得到;3,菜肴质量与服务质量方面有待加强。
